Health educator and coach Nicole Carter returns to the show to talk about the carnivore diet and how it helped her heal from long-standing health problems. An ex-vegan, Nicole ate a whole-food plant-based diet for over 15 years, as well as a year as a raw vegan.
She describes how her health deteriorated for many years while she was vegan. She was eventually diagnosed with ulcerative colitis. After many attempts to stay plant-based, Nicole slowly added fish and eggs to her diet, at the advice of her doctor. This helped, but her symptoms didn’t completely resolve until she went fully “carnivore” or “zero carb.”
Eating only meat, fish, and eggs, Nicole claims she has healed from her health conditions, has amazing energy and is in the best shape of her life. We also talk about what the carnivore diet is, the many different versions of it, and the environmental impacts of being plant-based or carnivore.
